This matcha is produced in Nishio, Aichi Pref. in Japan, where the lush natural environment provides nutrient-rich soil and pure mineral water.

Tea Cultivars: Samidori ,Yabukita, Okumidori 
1. Samidori (早緑)

Characteristics: A cultivar selected in the Uji region of Kyoto, specifically developed for high-quality Tencha (the base of Matcha).

Flavor & Aroma: Known for its intense Umami and low bitterness, resulting in a remarkably mellow and creamy mouthfeel. It features an elegant, refined aroma.

Color: Produces a vivid, brilliant green. It is a premium cultivar often reserved for the highest-grade Matcha.

 

2. Yabukita (薮北)

Characteristics: The most popular cultivar in Japan, accounting for approximately 75% of total production. It was originally discovered by Hikosaburo Sugiyama in Shizuoka Prefecture.

Flavor & Aroma: Offers a perfect balance of Umami, sweetness, and astringency. It is characterized by its refreshing aroma and clean, crisp finish.

Color: Produces a consistently bright and stable green.

Evaluation: Due to its exceptional balance and resilience, it is the leading cultivar used for both premium Sencha and Matcha.

 

3. Okumidori (奥緑)

Characteristics: As the name suggests ("Oku" meaning late), this is a late-budding cultivar that is harvested later than Yabukita.

Flavor & Aroma: Rich in Umami with a deep, full-bodied profile. It has minimal bitterness and a robust, solid presence on the palate.

Color: Known for its beautiful, deep dark green (Noryoku-shoku), which results in a stunningly vibrant Matcha color.

Evaluation: Often cultivated alongside Yabukita to stagger the harvest season while ensuring a steady supply of high-quality Tencha.

    Best before date: 12 months from the date of manufacture, as shown on the bottom back of the product

    Storage method: Avoid direct sunlight, high temperatures and humidity, and be careful not to let the smell linger.

    Features: This product uses only organically grown matcha from Nishio city, Aichi Pref.. It is made using only the first-flush tea harvested in spring, resulting in a rich, flavorful and delicious matcha.

    Since matcha is used in the tea ceremony, it may seem a bit extravagant to use it to make sweets, but there are many ways to enjoy it, such as making matcha latte or matcha coffee. Please give it a try.
